Hi Tom. You're so lucky to be able to pick fiddlehead ferns nearby! I'm so jealous! Thanks for your comment.

Just spied some fiddleheads at the Ferry Terminal Marketplace on a recent visit to SFO. Gorgeous, but at $15.00, I'm walking out the back door when I get home (back to the Pacific NW) and into the the woods for these savory treats. Who knew?! Thanks for the great recipe--Tom

For those of you who want to try this dish, or try using fiddlehead ferns but can't find it in your area, a mail-order source is Marx Foods. Their minimum order is for 2 lbs. and right now they have fresh fiddlehead. Here's their web site http://www.marxfoods.com/fresh-fiddlehead-ferns;jsessionid=0a0110501f439fd2693b37cf455baa7e81e172a3daab.e3eSc3aPaxmLe34Pa38Ta38Mc3f0?sc=17&category=-117

I remember an Asian cooking show I watched months ago about the fern, as what Ed had said above you should choose the young ones. I can barely remember the name of the recipe but that was with Chicken and Alfredo Sauce. You do have a very nice recipe! I have not eaten this one yet, but I am tempted now to try, with your recipe as my starter of course!

I just made a pasta with fiddleheads, this looks great too! (I was also a little disturbed by the look of them, it's not just you!)

I miss City Market, it used to be on my way home from work. Sigh...

Very good point, Ed. Also, for all you folks reading: Don't go off into the woods gathering young fern fronds yourself. Leave it to the pros or take a class. I don't think every type of fern variety is edible.

Thanks Cathy. My mother actually thought of trying them in a Thai sour curry dish. So that might be up next. On the goose, I think I'll stick to duck. Have you ever tried quail? Wonder if it's similar.

It bears mentioning that you should only eat the very young ferns as they become toxic when they get larger.
