Yummy Dumpling is opening a second location at 1130 Royvonne Avenue SE in the location that was previously The Rub.

Yummy Dumpling co-owner Jody Riggs confirmed that he and his wife and co-owner Jingrong Riggs are preparing to open a second Salem Location.

In an exclusive interview at their new location at 1130 Royvonne Avenue SE in South Salem in the location that previously housed The Rub, Riggs said he anticipated that the new Yummy Dumpling location would be open sometime in early August.

Since opening in downtown Salem in the basement of the Reed Opera House on Feb. 27, Yummy Dumpling has been drawing a loyal and enthusiastic following.

Riggs said the booming business has enabled the couple to open a second location. The new restaurant will enable the couple to offer home-style Chinese food made with love and quality ingredients, Riggs said. One of the new restaurant’s specialties will be a variety of hot pot dishes where diners can chose from a variety of vegetables, noodles and meats and cook in steaming hot pots in their choice of broths, he said.

Also available will be the famous house-made dumplings that has drawn a loyal following downtown.

Jingrong Riggs is a native of China and grew up in a small northwestern town made famous because it’s the site where China launches all of its satellites.

She came to study at Oregon State University, where she met her husband.
