Kao Thom — Thai Porridge

Thai porridge brings back fond memories from my childhood in Thailand, where I spent many weekends at my cousin’s house. It’s a dish that my favorite uncle would serve for breakfast. The bland taste of the rice porridge would be punctuated by the side dishes that were each full of their own flavors: salty, savory, sweet, sour and pungent. To this day, it’s a comfort food that we enjoy at our home and it brings back warm memories of my cousin who is now half a world away, and my favorite uncle who is no longer alive.

I located a perfect slaw recipe using Mae Ploy’s Thai Sweet Chile Sauce in the dressing at www.epicurious.com. This and a Bhutanese Red Rice Salad would be sensational together.

When I came across a recipe for Sole Piccata with Grapes and Capers in Bon Appétit, I knew I had to try it. It was one of those “Holy capers Batman, this dish goes super kapow!” recipes. The grapes added a bold dimension without overpowering the lemon and capers but stood next to them equal in flavor. This is a weeknight dish that you can have on the table in a reasonably short time and can be dressed up for company if you don’t mind cooking at the last minute.
